Do writing assignments strike terror in your children? I'm often asked about this problem by mothers who find that I homeschooled my children. What I tell them is, "Don't stress over it, when your child finds something that interests them to write about, thus, a reason to write, they'll start enjoying it". My oldest son, Jonathan, hated to write. When I would give him a writing assignment his mind froze. We had many a battle, with us both nearly in tears. It was very hard for me to make him do the assignment I gave him, because, I had the same problem in school. I finally quit trying, it wasn't worth the battle. Hopefully, he wouldn't need to do much writing in life. Well, was I ever surprised when, one day (as a teen) he shows me a letter he wrote a friend (as a joke) posing as her secret admirer. It was hilarious and so creative. From that point on he went on writing songs, sermons, stories, etc. And I can't take the credit for it. Who Likes Mincemeat?
My mother always makes mincemeat pie at Christmas. This year she was going to be out of town until Christmas afternoon, so she gave me the little box of mincemeat. Okay, this is not my favorite dessert, therefore, it was not real high on my already long list of things to bake. I have been staring at that box ever since, thinking there's got to be an edible way to not let it go to waste. That's where the internet comes in handy. I found this recipe on http://www.fitnessandfreebies.com/ and it's actually, really good and low fat. It's for cookies, but, it was late and after the first batch it became a cake. It's good either way. Here it is:
Mincemeat Drop Cookies Low Fat Recipe
1/3 cup olive oil
1/2 cup sugar
1 egg
1 cup mincemeat prepared (inst. on box)
2 cups all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
Cream oil and sugar 'til fluffy. Add egg and beat well. Add mincemeat and mix well. Combine dry ingredients in separate bowl. Mix well. Stir into creamed mixture. Drop by rounded teaspoon on greased cookie sheet. Bake in preheated 350 degree oven 18-20 minutes. Optional-I added a little cinnamon and about 1/2 cup chopped pecans. Everythings better with nuts (my opinion).

Experience & Objectives
Ex-Homeschool Mom
I'd like to share some of our experiences (good and bad) and hopefully be of help to moms in the middle of homeschooling. I have a lot of good memories and thanks to God's grace & mercy, I am pleased with the end results.
Empty-nest Home Keeper
I'm still a keeper of my home, even though my 3 children have flown the nest. I love to talk about all things involved in keeping my home. And guess what? I'm still learning so, I may have as many questions as I do answers.
His helpmeet
I am the helpmeet to a wonderful husband and guess what? You guessed it, after almost 25 years I'm still learning to be the wife God wants me to be. My will is stronger than I thought. I do want to share through the grace of God and lots of tears the things I've learned and am learning.
Christian Woman
I gave my heart to God as a child and would you believe, I'm still learning all the time, more about Him. I would love to share with you those things that I feel would be edifying to you as women and keeper of your homes.
Grandma
Although I only have 4 months experience in this area, I just had to let everyone know that I have and adorable grandson, Nolan. I'm sure you'll be hearing about him and if you have tips for this new season of my life, feel free to share.
